Got old ripe bananas on your counter? If your kids are like mine, once a banana is browning or bruised, they are refused. That is when I save food dollars by turning them into something more appetizing. This is a really basic easy recipe I learned from my mother and the results have been tried and true. Hope you enjoy!
Banana Bread
2/3 Cup Sugar
1/3 Cup softened butter
2 eggs
2 T. milk
1 1/4 t. baking powder
1/2 t. baking soda
1/2 t. salt
1 3/4 Cups flour
1 Cup banana (about 4 ripe bananas, a little more is okay)
1/4 walnuts (optional)
_________________________________________________________
* Generously butter loaf pan and preheat oven to 350 degrees
* Creme the butter and sugar together
* Mix in eggs and milk until smooth
* In a separate bowl mix flour, baking soda, baking powder and salt together
* Combine first and second mixture thoroughly
* Mash bananas with a fork, and add to batter, mixing well
* If you are adding walnuts, you can fold them into the batter (or sprinkle them over the top of the batter once it's in the pan. It makes a nutty crust and it looks amazing after it's baked!)
* Bake in buttered loaf pan until top is brown and springs back when pressed with a fork, usually between 40-60 minutes
