You probably think that cooking squash is daunting. The skin is tough and thick, but I will show exactly how to do it. It's much easier than you think!
Take a squash or two. I usually do a couple at a time so I can freeze some for later.
Cut off the top and bottom. The skin in tough so use a sharp knife that is on the large side.
Peel using your good old potato peeler. Don't strain yourself over it. The skin is thick but make regular easy strokes and go over it a couple times. Peel until the skin and cloudy white under layer is gone, and a nice cantaloupe color emerges. You can see above that the right half is peeled, the left isn't.
Once peeled, cut it in half lengthwise. This is what you will see. You'll need to scoop out the seeds.
Here is a trick for you... somewhere down the line I figured out that my metal measuring cups were tops at scraping out jack-o-lanterns and butternut squash.
Cut the squash into 1-2 inch cubes.
Place into a casserole dish, put a few pats of butter here and there and a few T. of brown sugar. Cover and bake at 350 degrees until soft. Mine took about an hour and a half.
All cooked! You can eat them like this, or how I like them (see below.)
Mashed! Stick the blender right in and give it a quick whirl. Doesn't take much to blend it right up into a smooth delicious treat. (That's right, I just called veg a treat! mmmmmm) So good, and good for you too! Perfect accompaniment for any roast, chops or poultry, or eat it on it's own!
