This soup may not win any beauty contests, but it's what's on the inside that counts, and what that is, is loads of flavor! It's cozy enough for a cold winter's night and delicious enough for the 4th of July. It's quickly become a family favorite!
Creamy Cheeseburger Chowder
(Makes 2 gallons)
5 lb. of potatoes, peeled and cut to one inch cubes
1 gallon of water
1 cup mushrooms
1 medium onion
3 cloves of garlic
2 T. olive oil
1/4 t. crushed red pepper
1/2 t. pepper
salt to taste
1/4 cup rice flour or corn starch
2 lb. hamburger
3 cups (or more) milk
1 cup heavy whipping cream
2 cups shredded cheddar cheese

-Start peeled and diced potatoes boiling in a gallon of water on high so they will be ready when you need them.
-Caramelize the onion, mushroom and garlic in the olive oil. I grind mine in the food processor for a creamier texture (and so the kids will eat it) but it's not necessary if you prefer a chunkier soup.
-Add the hamburger to the pan and brown. Allow it to get a good sear on the meat as it makes for great flavor.
-Drain excess fat.
-Add pepper, crushed red pepperand rice flour/corn starch and stir in.

-While keeping the meat mixture on the heat, add the milk while stirring to create a rue. Stir until thickened. (It should be about as thick as an alfredo sauce, so if you need to add milk you can.)
-Add the heavy cream and stir into the rue.

-Pour the rue into the boiling pot of potatoes and stir it in.
-Add the cheese and stir until melted.
-Salt to taste.
-serve garnished with a dollop of sour cream and a sprinkle of cheddar. You could always one up it with some crumbled bacon too! Mmmmmmm! Hope you enjoy!
