By far the easiest chicken taco meat recipe I have found. This meat is great in taco shells, but also makes great chimichangas, chicken enchiladas, nachos, dips, taco salads- etc...
Chicken Taco Meat
4-6 boneless skinless chicken breasts
1 jar of green salsa
2 T. butter
2 T. Taco seasoning
1/2 to 1 t. salt (to taste)

Pre-heat the crock pot.
Brown the chicken in the 2 T. butter to give each side color (flavor). No need to cook through.
Put the chicken in the pre-heated crock pot. Pour the salsa, taco seasoning, and salt over the top.
Give it a little stir, cover and let cook on high for 4+ hours.
If it gets dry, you can add a little water, especially if leaving in the crock pot for more than 4 hours.
Once cooked, shred the chicken up with 2 forks. This will be very easy as the meat will be soft and falling apart. My husband was husband was hungry so went ahead with this step without me, sorry for the lack of pictures to demonstrate!
