Had to jump on the pumpkin bandwagon for fall, and this recipe played off of my previous posts about pie filling + angel food cake mixes. The Recipe is as amazingly simple as all the others:
1 can of pumpkin
1 box angel food cake mix
1 t. pumpkin pie spice (or if you don't have any, 1 t. cinnamon, 1/2 t. ginger, and 1/4 t. cloves)
-preheat oven to 350 and butter cake pan
-mix pumpkin with spices thoroughly
-add dry cake mix and stir until mixed (will take a little doing)
-put in pan and bake for 25 minutes

It would be wonderful with a little glaze like I made for the blueberry cake, or easier yet, a dollop of whipped cream. My kids loved this recipe, and it was easier than pie- literally!
