I had a beautiful bunch of celery that needed to be used and lets be honest, sometimes I don't get to it fast enough and it goes to waste. I hate throwing food in the trash, especially since having a garden. I realize how much time, effort and love goes into growing food, so I keep the waste down as much as possible. I use my food processor as a money saving tool.
I put the celery in the processor with a tablespoon of water and grind it up until totally pureed like applesauce. Why would a person want pureed celery you might ask? Kids, is my answer. They love the flavor of veggies, but the texture? Not so much. Since getting them to accept the flavor is half the battle (and the vitamins and fiber are important) I puree a lot of veggies and sneak them into sauced, soups, and casseroles.
Once the veg is pureed, spoon it into ice cube trays.

chill in the freezer for a couple hours..
..and voila, celery cubes of LOVE!
Store cubes in a baggie or an air tight container in your freezer and toss them into your dishes when desired.
I also made homemade salsa cubes. What a time (and $$$) saver!
