My kids love this casserole. It is simple to make, takes only minutes to prepare and about an hour to bake. Perfect for easy Sunday mornings, holidays- I make it for supper sometimes!
ingredients:
One 24 oz. bag of shredded frozen hash browns
1 Lb. of bacon, chopped and cooked
1 1/2 cups cheese (I used 1/2 cup cheddar, and 1 cup mozzarella, but any cheese you like)
1 cup milk
a dozen eggs
1 t. salt
1/2 t. pepper

-Preheat oven at 350.
-In a mixing bowl, mix together the hash browns, bacon, cheese. Pour into a greased cake pan and spread out evenly.

-In the mixing bowl, mix the dozen eggs, milk, salt and pepper and scramble thoroughly. Pour over the hash browns.
-Bake for an hour or more, until the eggs have set.

The bacon stays nice and crisp!
Garnish with chives if desired. Happy eating!
