Time to make a holiday favorite, though we enjoy these all year round.
1 bag of chocolate kisses or chocolate stars
2 cups flour
1/2 cup firmly packed brown sugar
1 cup butter, softened
2 eggs, separated
1/8 tsp. salt
1 tsp. vanilla or almond extract (I do half and half)
Sugar or sprinkles if desired for decorating
-Preheat the oven to 350 degrees
-Creme butter and sugar together
-Separate your eggs and add the yolk to the butter/sugar mixture, set the whites aside for later.
-Add the flour, salt, and vanilla and/or almond extract, and blend together. If you live in a cold climate and it's winter, even at room temperature you may end up with something like this- way too powdery. If this happens, put the whole bowl in the microwave for about 30 seconds and try again.
-There, that's better!
-Measure dough out by the Tablespoon
-Use your hand to roll dough into balls
-If you wish to decorate, dip into egg whites (after a light whisking)
-Then dip into anything you want. I am using colored sugar, but nuts would be good, as well as sprinkles
-Put on an un-greased cookie sheet and use your thumb or a spoon to create an indention
-These don't really spread, so you can put them quite close together.
-Bake for 8 minutes
-Bake for 8 minutes
-Remove from oven and put kisses or stars on top. There is no need to press down very hard because the cookie will split and break if you do. The chocolate will melt and get stuck all on it's own.
Whoops, here is one that I split! Oh well, gives me an excuse to taste them!
-Replace back in the oven and bake for about 10 more minutes or until the bottom is getting a little golden brown
-Allow to cool on cookie sheet for 2 minutes before removing.
