I've wanted one of these forever, and I finally picked one up. It still has the Goodwill sticker on it but I don't care, it's brand new to me! I looked up the operators manual online, cleaned it up and am ready to try it out.
Incidentally, I also had a new grain I wanted to try. I have been curious about spelt for some time because of it's antiquity. it has remained unchanged for thousands of years and has been touted as easier to digest than wheat.
Ingredients/directions:
Put into bread maker in this order:
1 1/2 cups tepid water
2 T. veg. oil
1 t. salt
2 T. sugar
4 Cups spelt flour
2 1/2 t. fast rising yeast
Turn on. Press to bake on the basic setting, light crust. That's it!
I was fascinated watching the machine do all the work. Why didn't I buy one sooner?

After 3 hours, here it is. It looks and smells heavenly!
It tastes great too. The spelt is a little more dense than regular bread, I am thinking of trying another recipe to see if I can get a lighter bread, but as far as flavor goes, it is superb.
A lot of people buy bread machines and never use them, or get them for a wedding gift and forget about them. I suppose it is easier picking bread up at the store, but when you have food sensitivities or are really interested in what is in your food, a machine like this can be invaluable. I can't wait to see what else I can come up with using it. Each step closer to simple and natural I get, the better I am certain I will feel.
